RECIPE: Curry Hummus!

Makes a great snack!

Directions:
In the bowl of a food processor or heavy-duty blender, combine all of the ingredients.

Puree until smooth, scraping down the sides as needed.

Transfer to a serving bowl, and serve with crackers and/or fresh raw vegetables.

Ingredients:
1 14 ounce can chickpeas (garbanzo beans), drained and rinsed
2 ½ teaspoons mild curry paste such as Patak's
¼ cup extra-virgin olive oil
2 tablespoons water
1 tablespoon fresh lemon juice
1 garlic clove minced
¼ teaspoon kosher salt
pinch of cayenne pepper to taste

Vegan Avacado Toast with Hummus!

Healthy Snacks- VIA Cooking Canuck 

Directions:
Toast the bread.

In a small bowl, mash the avocado with the back of a fork. Season with the salt.

Spread 1 tablespoon hummus on each slice of bread. Divide the mashed avocado between the two slices.

Top with pickled red onions and sprinkle with the sesame seasoning blend. Serve.
Ingredients:
2 slices whole wheat thin sliced bread 
⅔ avocado 
2 tablespoons hummus (I used jalapeño cilantro flavor)
6 tablespoons pickled red onions
½ teaspoons sesame seed seasoning
